Her approach is meticulous and deeply personal, with each cake designed to seamlessly complement the event while delivering an exceptional guest experience.
In this edition of The Wedding Series Expert Series, we speak with Rita about her creative process, the evolution of wedding cakes, and what it truly takes to create a centrepiece that is as meaningful as it is beautiful.
Your work sits at the intersection of art and celebration. How do you approach designing a wedding cake that feels both visually striking and deeply personal to each couple?
For me, it always begins with the couple — their story, their style, and how they want their day to feel.
We sit down together and go through their ideas. They might love the florals on one cake, the proportions of another, or a particular texture or finish. It becomes a collaborative process where we take those elements and refine them into something cohesive.
I always use inspiration as a guide. Every cake is a reinterpretation — something tailored specifically to each couple.
From there, I look at the bigger picture. Sometimes the design is influenced by the venue — I’ve created cakes that complement spaces like the Sydney Opera House — other times it’s inspired by the bride’s gown or the overall styling of the day.
It’s about bringing all those elements together and creating a piece that feels personal, intentional, and visually striking — a cake that doesn’t just sit in the space but truly belongs there.
You are known for your meticulous attention to detail. What are the finer elements that couples may not immediately notice, but that truly elevate a cake to a luxury experience?
For me, the finer details go far beyond what you can physically see in the cake.
It’s about how my clients feel throughout the entire journey. Planning a wedding can be overwhelming, so I focus on creating an experience that feels calm, supported, and genuinely enjoyable. I want my couples to feel completely confident — to know they’re in safe hands and that everything is being taken care of.
From the very beginning, I focus on clear and open communication. Everything is documented, everything is explained, and my clients always know exactly what to expect. There’s no uncertainty, and no need for them to follow things up — I’m always across every detail making the experience seamless.
Behind the scenes, I limit the number of cakes I take on so I can give each one my full attention. Every cake is made from scratch using quality ingredients, with a strong focus on precision and finish.
On the wedding day, I personally deliver and set up every cake. I coordinate with venues and suppliers, and I’ll wait if needed to ensure the timing is right and the cake is placed exactly as it should be. Even after delivery, I check in — because to me, it’s not just about the cake, it’s about the full experience.
Those are the details that may not always be seen, but they are felt. And that sense of care, trust, and ease is what truly defines a luxury experience.

Can you walk us through your design process — from the initial consultation to the final creation on the wedding day?
From the initial enquiry, I respond promptly - typically within 24 hours - to gather key details and gain a clear understanding of what they’re looking for. I then provide a detailed quote, so everything is transparent from the outset.
Once they’re ready to proceed, a deposit secures their date. I make it clear that this confirms the booking rather than the final design, allowing clients the flexibility to refine and evolve their ideas as their wedding plans come together.
In the lead-up to the wedding, we schedule a final consultation to walk through every detail—from design, sizing, proportions, venue logistics, and timing. This ensures everything is thoughtfully considered and nothing is left uncertain.
Behind the scenes, I coordinate closely with venues, florists, and other suppliers to ensure a cohesive result. Where florals are involved, I liaise directly with the florist to ensure perfect alignment. For any installation elements, such as dance floors, I confirm timing to ensure everything runs smoothly and the cake is positioned at just the right moment.
Each cake is handcrafted with care, and on the day, I personally deliver and set it up on-site. Once complete, I always send a message to let my client know it has been safely delivered and is ready.
Even after the wedding, I follow up - because for me, it’s about the entire experience, not just the final product.
Flavour is just as important as form. How do you guide your clients in selecting combinations that not only photograph beautifully but also create a memorable guest experience?
For me, flavour is just as important as design - it’s what guests remember long after the day has passed.
A significant part of my business comes from word of mouth and returning clients, which I value deeply. Many couples have experienced my cakes at other weddings or celebrations, so they come to me already familiar with the quality and taste they can expect.
Throughout the year, I offer curated tasting boxes featuring my most popular flavours. From there, each cake is fully customised - whether that’s incorporating elements like lemon curd, adding fresh fruit, or refining flavour combinations to suit each couple’s preferences.
I also consider the overall guest experience. I’ll often ask what other desserts are being served to ensure we’re not duplicating flavours but instead creating a sense of variety. In many cases, I recommend selecting two flavours, so guests have a choice, much like the rest of the menu.
Ultimately, my goal is for the cake to deliver just as much impact in flavour as it does in design. It should be something guests talk about - not only because it looked beautiful, but because it tasted exceptional. That element of surprise, when something looks stunning and exceeds expectations in flavour, is what I strive to create every time.
Over the past decade, how have you seen wedding cake design evolve, particularly within the luxury market?
Wedding cakes have evolved significantly over the years.
We’ve moved from more traditional designs to larger, more statement-driven pieces, as well as more interactive elements influenced by social media.
While these trends are exciting and creative, I believe luxury has also become more refined. It’s no longer just about size or scale - in fact, a larger cake doesn’t necessarily make it more luxurious. True luxury is in the detail, the craftsmanship, and the precision. It’s about creating something that feels considered, balanced, and beautifully executed.
I also find that while couples are inspired by trends, many still gravitate towards timeless designs. There’s a growing awareness that wedding photos are forever, and couples want something that will still feel elegant and relevant decades from now.
So, while the industry continues to evolve creatively, there’s a strong return to quality, refinement, and intentional design - which is where I believe true luxury sits.
What are some of the most exciting or unexpected design requests you’ve brought to life for your clients?
Some of my most memorable designs have come from clients who place complete trust in the process and allow me the creative freedom to bring their vision to life.
One standout was a cake I created for Elie & Amy. It was a true showpiece - a balance of height, texture, and refined detailing. We incorporated vertical wafer paper, soft ruffled elements, smooth fondant finishes, and subtle tier separation to create movement and depth throughout the design.
What truly elevated the piece was the personalised acrylic detail made by Cabe & Co, inspired by the couple’s monogram and stationery. It tied the entire look together in a way that felt incredibly cohesive, elegant, and considered.
Another experience that stayed with me was creating a cake for Jermaine & Georgia whose mother is a cake maker herself. There’s a certain level of pressure when you’re designing for someone who understands the craft so deeply, but also a great sense of honour. Knowing it exceeded her expectations was incredibly rewarding.
For me, the most exciting part of any design is that final moment - when everything comes together and you can step back and see the piece in its entirety. But more than that, it’s the reaction from my clients. Hearing that what I’ve created was beyond what they imagined is what makes the process so meaningful.
For couples beginning their planning journey, what advice would you give when it comes to prioritising and investing in their wedding cake?
My biggest advice is to enquire early.
There’s no harm in reaching out as soon as you’ve secured your venue, it allows you to understand pricing, explore your options, and most importantly, secure your date. Availability is limited, so locking that in gives you peace of mind and allows everything else to flow from there.
Once your date is secured, the process becomes much more relaxed. You have the time to refine your ideas, explore designs that suit your style and budget, and create something that truly complements your wedding.
I always remind my couples that your cake is more than just dessert, it’s one of the key focal points of your reception. When guests walk into the space, the cake naturally draws attention. It sits amongst the styling, the florals, and the overall design, and plays a significant role in the visual impact of the room.
At the same time, it doesn’t need to be oversized to feel luxurious. A well-designed cake, with the right proportions, detail, and finish, can have just as much presence as something much larger.
It’s about making considered decisions, investing in quality, design, and experience rather than simply size.
Your service is known to be highly personalised. How do you create a seamless and elevated experience for your clients throughout the process?
For me, it begins with how my clients feel from the very first interaction.
My approach is warm, welcoming, and highly personalised. I want every client to feel comfortable, supported, and completely at ease throughout the process. At the same time, I place a strong emphasis on organisation and clear communication, ensuring the experience feels seamless and effortless on their end.
I take a proactive approach to every stage. My clients never need to follow things up or wonder what comes next, I’m always one step ahead, sharing information, confirming details, and guiding them through the process with clarity and confidence.
Regular check-ins are an important part of this. Whether it’s in the lead-up to the wedding, coordinating with venues and suppliers, or confirming final details, I ensure my clients always know where things stand. This creates a strong sense of reassurance and trust.
For me, a personalised experience extends far beyond the design of the cake, it’s about how the entire journey feels. It should be smooth, well-organised, and genuinely enjoyable, allowing my clients to focus on their day, confident that every detail is being thoughtfully managed.
Looking ahead, what trends or design directions are you most inspired by right now in the world of wedding cakes and event styling?
I’m really inspired by the balance between modern design and classic elements.
Lately, I’ve been seeing couples bring in traditional touches, like bride and groom figurines, but incorporating them into more contemporary, refined cakes. It creates this beautiful contrast, where something nostalgic is reimagined in a modern way.
I’m also loving the subtle layering of detail; for example, a clean, modern cake with abstract elements, softened with classic finishes like pearls or delicate textures. It’s that combination of simplicity and refinement that feels incredibly current, yet still timeless.
What excites me most is seeing couples become more open to creativity. I love when a cake takes inspiration from the bride’s gown or unique design elements within the wedding, translating those details into something artistic and unexpected.
Moving forward, I’m excited to create more artistic, expressive cakes - pieces that feel unique, personal, and a little more daring, while still maintaining elegance.
