Four Seasons Sydney Hotel's Mode Kitchen & Bar Launches Spring Chef's Table

On Tuesday 26 September, Mode Kitchen & Bar officially launched their Spring Chef’s Table with an exclusive intimate dinner for VIP guests. Hosted and Styled by The Wedding Series Founder Kate O’Shea guests included TV Personality Sam Frost, Home & Away’s new heart throb Jake Ryan, Designer Viktoria Novak, Stylist and Author Jeff Lack, Uber Stylist Mel Tan and Film Maker Adam Saunders, to name a few.

Located in Sydney’s CBD, Mode strikes the perfect balance between casual bistro and fine dining – the setting is unpretentious and welcoming with a touch of luxury and glamour; the service is friendly and genuine yet with polish; food embodies great cooking and delicious flavours, elevating fresh ingredients and the people behind the produce.

The eye-catching handmade oak wood Chef’s Table seats 14 and set the scene for the occasion with an abundance of colourful Ranunculus in celebration of the new season. Exclusive Cire Trudon candles perfectly scented and subtly lit the stunning space as guests sat down to the lavish feast ahead.

Upon arrival the glamourous group were treated to Mode’s signature drink, the Mode G&T with StrangeLove Dirty Tonic and limited edition rare Archie Rose Spring gin, paired with delicious house- made Wagyu Bresaola, mint and goats curd canapés.

The fashion forward set were treated to an incredible selection of shared dishes from the new Spring menu including Baked zucchini flowers, Jamon Serrano ricotta and peas; Hiramasa kingfish sashimi, macadamia, sweet & sour onions; Risotto, asparagus & morel mushrooms; and the undoubtable crowd favourite, the Chef’s Coorong 1 kg Angus Tbone 21-day aged steak.

Italian born Head Chef Francesco Mannelli said of the evening, “It was my pleasure to unveil our new spring dishes and Chef's Table on such a special occasion. Our food is all about seasonal flavours and celebrating the ingredient, and spring is my favourite season! The fresh produce, colours and fragrances are inspiring, and to celebrate these on our menu is very exciting."
