The Wedding Series worked with Your Gourmet Catering to create an exceptional Bridal Tasting Experience for a group of couples from all around Australia who were looking to get married at French Chateaux inspired property Deux Belettes just outside of Byron Bay.

The Wedding Series Styling Director Hayley Cravigan created an intimate yet breathtaking setting for guests to enjoy the scrumptious menu developed by Your Gourmet Catering owner Leela Brett.

We spent some time chatting to Leela Brett about her menu and her tips for your special day.

Can you tell us about Your Gourmet Catering?

Your Gourmet has been cooking for special celebrations in the Byron Bay and Gold Coast Area for 14 years. Our commitment to catering only one event per week and our love for what we do makes every single event amazing.

We love hearty robust flavors, served in an elegant way. Flavor and presentation and really hands on customer service define our approach.

What do you think is the beauty in this kind of tasting experience?

This kind of tasting is about meeting the chef and it allows me to cook for a few couples in an intimate setting. The wedding day is over so fast and this is another way to enjoy that experience of being engaged and planning your special day together. It is also an opportunity for a couple to make specific comments about a dish so that it better suits them on the wedding day.

Can you tell us a little about the menu you created for this Bridal Tasting Event hosted by The Wedding Series?

I wanted to do a really lush antipasti bar to embellish the round table that Hayley had created around the Sperry Tent teepee central pole.

The antipasti bar has the usual cheeses, fruits and nuts but in addition some heartier options like quiche and roast kipfler potatoes so that the antipasti bar could be an appetizer course or a lunch or dinner option.

In addition to this I gave the guests a choice of two entrees: goat cheese pannacotta with beetroot and amaranth crisps, or twice-baked gruyere soufflé with sautéed mushrooms and rocket salad.

I usually try to use at least a few dishes from the menu of the couples who are going to attend the Tasting Experience so they get to have something from their own wedding.

What tips would you give brides and grooms when planning their menu on their special day?

It goes against the grain, but I tell my couples to be as selfish as possible and really pick dishes that they love and not try to overthink what the guests will want.

It is their job to teach me about all the things they love so the menu is particular to them. It is my job to take all the things they love and put together a menu that everyone will enjoy.

If the menu is not balanced I will make suggestions to make it right for everyone. We make special dishes for anyone that is vegetarian or vegan and bend over backwards to make sure everyone has amazing food.

Are there any current food trends that you are really seeing in the wedding space for 2017?

I am seeing more requests for degustation style meals and also for food stations, so both ends of the culinary spectrum there!
